Our garden is producing an abundance of yellow tomatoes. I had never had them before, so I am not quite sure what made me plant them to begin with. I am glad I did because I have discovered they are a lot less acidic than the red tomato and they are very good.
The problem is I don’t know what to do with all of them, so I have been bringing them to work by the pounds. Tonight I decided to make salsa with them. This only took four tomatoes, so I am not sure what to do with the rest of them.
Anyway, I used four of the yellow tomatoes, went to Kroger and picked up some red onions, fresh garlic and cilantro, I grabbed a couple banana peppers from the garden fried them up in a pan, and mixed it all together and it was really good.
